Low-Carb Vegan Carrot Mug Cake Recipe

Ingredients:

  • 1 tablespoon coconut flour

  • 1 tablespoon almond flour

  • 2 tablespoons granulated monk fruit sweetener (sub for granulated sweetener of choice)

  • ½ teaspoon baking powder

  • ½ teaspoon each: cinnamon/nutmeg/ginger (or sub for pumpkin pie seasoning)

  • 1 flax egg (or 1 whole egg if non-vegan)

  • 2 tablespoons shredded carrot

  • ½ cup of unsweetened almond milk (or your favorite milk alternative)

Directions:

  1. Preheat the oven at 400 F for 10 minutes.
